'End of an era': Outgoing Fat Tuesday's owner reflects on 27 years of business

When Richard Hirsch bought Fat Tuesday’s in the fall of 1997, he quickly realized what the Dubuque establishment meant to regulars.

“When I came on board, I talked about getting rid of the basketball hoop and talked about changing the name,” Hirsch said. “Most people let me know on both accounts that they wanted to see it stay (the same).”

Over the years, Fat Tuesday’s, a bar and grill with a Cajun flair located at 1121 University Ave. — about halfway between Loras College and the University of Dubuque — has remained a neighborhood staple. Locals and students alike come for food, drinks, games, sports and community. Hirsch has also used his position to help raise funds for area charities.

Blueberries bring fruity tartness to this streusel-topped German cake
